Tuwo Shinkafa and Miyan Wake

Tuwo Shinkafa and Miyan Wake are popular Northern Nigerian delicacies. Tuwo Shinkafa or Rice tuwo as it’s also known is a “Swallow” made from mashed cooked Rice or Rice Flour while Miyan Wake is simply Beans soup, similar to the popular Yoruba Gbegiri. Tuwo Shinkafa is best made with short grain rice or any starchy rice type, I prefer Basmati, Jasmine or any sticky rice for Tuwo Shinkafa.

 

Miyan Wake Ingredients:

2 Cups Black Eyed OR Brown Beans

2 Cups Chicken or Beef Stock (Optional)

1 Cooking Spoon Palm oil

1 Medium Smoked Fish Shredded (Optional)

Cooked Assorted Meats (Optional)

1 Bell Pepper

1 Scotch Bonnet

1 Small Onion

1/2 Inch Ginger Root

3 Garlic Cloves

Small chunk of Dawadawa

2 Bouillon cubes

Salt to taste

Nigerian Buka Stew recipe is one of the most viewed recipes on this blog. Earlier this month, I got to record a video recipe for my YouTube Channel and thought I’d share it on here. The recipe is a little bit different from the Buka Stew recipe posted on the blog in 2015 but it promises to deliver on taste, just like the previous recipe. Recipe link

For this recipe, you can mix and match your peppers. You may choose to use a mixture of red and green bell peppers like i did in my earlier recipe. You may also roast your peppers before blending, it’s up to you.
